Some loaves are meant to announce themselves. This one isn't.


Quiet Lemon was born in that in-between stretch of winter, when the days are still short but the light has started to change. Not more, exactly - just different. A little clearer. A little higher in the sky. You notice it on the counter in the afternoon, or on the floor near the window, and you realize something has already begun to shift.


This is not a sweet bread. The lemon is there only as brightness, not as flavor that demands attention. Olive oil softens the crumb, and a small amount of cracked pepper gives it warmth without turning it into something heavy. The result is a loaf that feels clean, steady, and quietly alive - meant for soup nights, simple meals, and the kinds of days that don't need much from you.


This is the bread I make when I want to feel the season turning before it's obvious. When I want something that doesn't shout, doesn't perform, but just is. A good, honest loaf, carrying a little light back into the kitchen.
